Rockies

Rockies are probably not originally Ghanaian, but they’ve been part of traditional pastries sold as street snacks for such a long time, we can safely add it to our traditional Ghanaian snacks.

Rockies are so easy to make and the kids love them. I remember as a child, there was this Fante lady who made the best rockies in my neighbourhood. Aaah, the smell that filled the air round her house as you walked past was more than enough to send you knocking on her door for one. Rockies are just so easy to make and the ingredients are simple and easy to come by. Give it a try and let’s have your feedback.

Ingredients
  

  • 225 g Plain Flour
  • 100 g Granulated Sugar/Brown Sugar
  • 2 tbsp Baking Powder
  • 1 tbsp Nutmeg
  • 125 g Cold Salted Butter
  • 1 egg
  • 2 tbsp / 30ml Evaporated Milk
  • 1 tbsp Vanilla Essence
  • 1/4 Cup Cranberries (optional)
  • 1/4 Cup Raisins (optional)

Instructions
 

  • Sift flour, baking powder, and nutmeg into a bowl. Add the granulated sugar.
  • Mix until well incorporated.
  • Add the cold butter and using the fingertips, rub the butter into the flour until well incorporated and looks like breadcrumbs.
  • In a cup, add the egg, evaporated milk, and vanilla essence and whisk together.
  • Add the cranberries and raisins if using.
  • Make a well in the flour mixture and add the liquid egg mixture.
  • Using a fork, mix the flour mixture until well incorporated. It should be a sticky dough.
  • Scoop a spoonful onto a lined baking tray.
  • Preheat the oven to 200oC and bake the dough for about 20 minutes or until lightly browned.
  • Remove from the oven, allow it to completely cool down, and store in an airtight tin
  • Enjoy as a snack or pair it with tea or any drink of your choice.
