Grilled Pork (Domedo)

Grilled Pork or Domedo, a popular street food in Ghana, is one of the tastiest meat aside kebabs. Usually the grilled pork which is cut up into mouth size chunks is seasoned with flavourful spices such as kebab powder and peppers. It is grilled over charcoal which also adds it umami flavours. The delicious spicy Domedo is mostly served with fried yams or kenkey.
You can replicate the same flavours and relive the nostalgia using the recipe below.

Ingredients
  

  • 700 g Pork Belly Slices
  • 2 Tbsp AVK 10 Spice Blend
  • 1 Tsp AVK 7 Spice Blend
  • 2 Tbsp AVK Kebab Powder
  • 1 Tbsp AVK Pepper Mix
  • 1 Tsp Garlic Granules
  • 1 Tsp Parsley
  • 2 Tbsp Olive Oil
  • Salt to taste

Instructions
 

  • Dice the pork belly into mouth size chunks.
    700 g Pork Belly Slices
  • Place all the spices in a bowl and mix into a paste.
    2 Tbsp AVK 10 Spice Blend, 1 Tsp AVK 7 Spice Blend, 2 Tbsp AVK Kebab Powder, 1 Tbsp AVK Pepper Mix, 1 Tsp Garlic Granules, 1 Tsp Parsley, 2 Tbsp Olive Oil, Salt to taste
  • Add in the pork belly chunks and mix well until nicely coated.
  • Grill straight away or allow to marinade for some couple of minutes or even overnight for maximum flavour.
  • Grill at 200 degrees Celsius for30-40 minutes. Turning the pork in halfway through the cooking time to allow an even cook on all sides.
