Ooh! for me as a child, Christmas was more about baking, pastries, doughnuts, fanta, muscatella, and the house filled with lovely smells throughout the day. My parents were such generous people.
During Christmas, they would kill one of their cows from the farm or share the meat with friends, family, and neighbors. It will be home-baked cakes and pastries if it wasn’t meat. When it was cakes and pastries, guess who did the most work? Yes, we the children, actually that’s how come I learned how to bake at a young age.
For me, it was such an exciting time and it created memories of warmth, love, and laughter during the season of love and sharing. I pray to God that I can provide my kids with such memories. Ghana Style Baked Sweet Chips
Ingredients
- 300 g Plain Flour
- 135 g Cold Salted Butter
- 2 tbsp Baking Powder
- 2 tbsp Caster Sugar
- 1 tbsp Calabash Nutmeg Powder (Wide3 Aba) or Nutmeg
- 1 egg
- 2 tbsp / 30ml Evaporated Milk
Instructions
- Sift flour, baking powder, caster sugar and calabash nutmeg into a bowl.
- Add the cold butter and using the finger tips, rub the butter into the flour until well incorporated and looks like breadcrumbs.
- In a cup, add the egg to the evaporated milk and whisk together.
- Make a well in the flour mixture and add the liquid egg and milk mixture.
- Mix and fold in until you have a dough.
- Roll out the dough on a floured surface. Roll out to about an 1/2 an inch thickness.
- Using a pizza cutter/knife/scissor cut the dough into cubes or strips or whatever shapes you like.
- Place the cut dough on a lined baking tray.
- Preheat the oven to 200oC and bake the dough for about 20 minutes or until lightly browned and crisp. One tip use to make it crunchy and crisp is to leave it in the warm oven after baking (with the oven off).
- Remove from the oven, allow it to completely cool down and store in an airtight jar.
- Enjoy as a snack, pair it with tea or any drink of your choice.
