Description
Ghana Banku Ready Mix – A fermented Corn & Cassava Dough Mix Flour. Banku is a Ghanaian dish made by cooking a mixture of fermented corn and cassava dough into a smooth sticky & thick paste / dumpling.
The cassava dough is made by soaking the cassava in water for a day or two. The cassava is then grated into a mashy paste. A bit of water is removed from the mashy paste so as to form a dough.
In making Aftrad Village Kitchen’s Banku Ready Mix, we use the same traditional method as described above to create the fermented corn and cassava dough. The individual doughs are then further dried to achieve a dry flour. Banku Ready Mix is then created by using a good mix of both the fermented corn and cassava flour.
It is dished out into balls and can be served hot, warm or cold with various soups and stews. The most popular way of serving banku is either with hot pepper and grilled tilapia or okro stew/soup.
