Versatile Green Chilli Sauce

Ingredients
  

  • 500-800 g Green Chillies use any fragrant type of green chillies
  • 250 g White Onion
  • 12 gloves of Garlic
  • 100 g Ginger use fresh or frozen
  • 2 sprigs Rosemary use fresh if possible or substitute with dried
  • 2 Bay Leaves use fresh or dried
  • 1 tbsp Aftrad Village Kitchen 10 Spice Blend
  • 1 tbsp Aftrad Village Kitchen 7 Spice Blend
  • 1 tbsp Shrimp Powder Optional
  • Salt to taste
  • 2-3 cups of Oil any type of oil will work

Instructions
 

  • Peel and wash the fresh ingredients, 500-800 g Green Chillies250 g White Onion 100 g Ginger 12 gloves of Garlic, 2 sprigs Rosemary, 2 Bay Leaves thoroughly with vinegar or salt water before using.
  • Chop up all the ingredients and add them to a blender.
  • Add 1 cup of oil to the blender and blend all the ingredients into a smooth consistency or your desired texture.
  • Heat up the rest of the oil 2-3 cups of Oil in a pot and add the blended ingredients.
  • Fry on a low heat, allowing the sauce to simmer gently and slowly. Stir occasionally.
  • Once the oil has settled on the surface of the sauce, add in the spice blends 1 tbsp Aftrad Village Kitchen 10 Spice Blend, 1 tbsp Aftrad Village Kitchen 7 Spice Blend, 1 tbsp Shrimp Powder and Salt to taste.
  • Cook for a further 5 minutes to all the flavours to combine well.
  • Sterilise and completely dry the jars and funnel to be used in transferring the sauce into the jar.
  • Transfer the sauce into the jars, allow the sauce to cool down completely before storing away.
