Ingredients
  

  • Homemade Meatballs
  • 50 g Fresh Ginger
  • 50 g Garlic Fresh Garlic
  • Handful of Fresh Parsley
  • 450 g Plum Tomato
  • 3 Large Roasted Bell Peppers
  • Leek
  • Scotch Bonnet Pepper to taste
  • 2 Sprigs of Fresh Thyme
  • 1 Medium White Onion chopped
  • 250 g Chorizo, sliced
  • 1 Tin Anchovies in Oil
  • 1 tbsp AVK 10 Spice Blend
  • 1 tbsp AVK 7 Spice Blend
  • 1 tbsp Curry Powder
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Light Soy Sauce
  • Salt to taste

Instructions
 

  • Heat a nonstick pot and add the chopped onions, chorizo, and anchovies including the oil.
  • Blend the plum tomatoes, roasted bell peppers, parsley, thyme, garlic, ginger, leeks, and scotch bonnet pepper.
  • Once the onions have sauteed till it looks soft, add in the tomato blend.
  • Add in the rest of the spice blend, soy sauce, and the Worcester shire sauce. Cover and let it simmer on a gentle heat until it's nice and thick and the flavors have developed well.
  • Add in the homemade meatballs, cover, and let it simmer for 5 minutes.
  • Check and correct seasoning with salt if needed. 
  • Once cooked, serve your sauce with an extra sprinkle of fresh parsley.
