Heat a nonstick pot and add the chopped onions, chorizo, and anchovies including the oil.
Blend the plum tomatoes, roasted bell peppers, parsley, thyme, garlic, ginger, leeks, and scotch bonnet pepper.
Once the onions have sauteed till it looks soft, add in the tomato blend.
Add in the rest of the spice blend, soy sauce, and the Worcester shire sauce. Cover and let it simmer on a gentle heat until it's nice and thick and the flavors have developed well.
Add in the homemade meatballs, cover, and let it simmer for 5 minutes.
Check and correct seasoning with salt if needed.
Once cooked, serve your sauce with an extra sprinkle of fresh parsley.
