Hard Chicken Groundnut Soup

Ingredients
  

  • 1 Hard Chicken
  • 2 Medium sized Onions (320g)
  • 800 g Vine Medium Tomatoes
  • 2 tbsp Tomato Paste
  • 25 g Fresh Gloves of Garlic
  • 70 g Fresh Ginger
  • 2 Scotch Bonnet Pepper (or to your taste)
  • 500 g Groundnut Paste
  • 1 Large Carrot (134g)
  • 2 Bay Leaves
  • 5 g Greek Basil (plus extra for garnishing)
  • 5 g Basil (plus extra for garnishing)
  • 1 tbsp Aftrad Village Kitchen 7 Spice Blend
  • 1 tbsp Village Kitchen 10 Spice Blend
  • Salt to taste
  • 3 lt of Water
  • 1 Small Lemon

Instructions
 

  • Clean Chicken and cut up into pieces. Squeeze some lemon juice over the chicken, wash and rinse it with some water.
  • Place the chicken in a soup pot, then add some salt to taste, 10 and 7 Spice blend
  • Blend 1 onion, garlic, ginger (reserve some slices), greek basil and basil with about 200ml of water.
  • Add the onion blend to the chicken.
  • Add in the other onions, tomatoes, tomato paste, pepper and carrot. Cover and let it season for about 20 minutes.  Then start to cook by steaming the chicken and everything in the pot.
  • Remove and blend the softened veggies. Add it back into the soup pot. Cover and let it simmer for about 10 minutes.
  • Now blend the groundnut paste with about a litre of water until smooth. Then add to soup pot. Top up soup with the rest of the water.
  • Turn up the heat and let the soup simmer for about 20 minutes. Then turn down the heat and let it simmer gently until cooked to perfection. This stage could take an hour depending on your heat settings
